Benefits of Beetroot Curry
Clear your pantry and make room for beetroot! This delicious beetroot curry doesn’t just taste good, but it’ll help relax your mind and give you a better sense of wellbeing. Imagine turning to this curry to help relax you instead of turning to mild anti-depressants! Beetroots are rich in betaine, which act as a minor ‘mood enhancer’. Through a series of events, it increases your serotonin levels (or ‘happiness’ hormone) and is used to relieve many cases of depression. So treat your tongue AND your mind to this tasty beetroot curry!
Ingredients
- 3 Medium beetroots
- 1 cup desiccated coconut
- 2 cups coconut milk
- 1½ tsp rice flour
- 2 tbsp ghee *
- 1 Bay leaf
- 2 cm Cinnamon bark
- 3 Green Cardamom
- 5 Black pepper corns or 1 tsp ground black pepper
- 1 Clove
- 3/4 tsp raw sugar (rapadura or jaggery)
- 1/4 tsp anise powder
- 1/4 tsp cumin powder
- 1 tsp salt
- 1 Pinch saffron
* Safflower or rice bran (vegan option)
Method
1. Clean and peel the beetroots and dice them in 3-4 cm pieces.
2. Cook this in a pot of water (about one cup) until they are tender. The beetroot pieces will take around 20-30 minutes to cook. (It will take longer if you cook the whole beetroot as opposed to diced pieces).
3. Dilute the saffron in 1 tbsp of water.
4. If you are using whole pepper corns, grind them into a fine powder.
5. Mix the rice flour into the coconut milk.
6. Heat the ghee in a deep saucepan for 1-2 minutes.
7. Add the bay leaf, cinnamon, whole cardamom, black pepper and cloves.
8. When this mixture starts to cook (you will notice the cloves opening up), stir in the sugar or jaggery, anise powder, cooked beetroot pieces and coconut milk.
9. Stir this and season with salt and diluted saffron. Let the curry boil for a few minutes and it’s ready to serve!
10. Serve with brown rice or quinoa for a relaxing and calming dinner!
