Pumpkin & basil

Serves 1-2


Ingredients:

• ¼ A bunch of basil, stems removed, leaves chopped roughly

• About 2 cups of pumpkin, chopped to about one inch pieces

• 1 Tablespoons of ghee

• 2 pinches hing

• Salt to taste


Method:

1. Melt ghee over low to medium heat

2. Add hing – cook for about 5 seconds

3. Add pumpkin – stir so as to coate with melted ghee (or put lid on and give it a shake so pumpkin is coated)

4. Leave to sit on medium heat from approx 10 minutes

5. Add salt, and mix

6. Cook for a further 5 – 10 minutes, until pumpkin is cooked to your liking

7. Add basil, mix in

8. Add 5 – 20 minutes – until pumpkin is cooked to your liking

9. Add basil. Stir in. Turn off heat.
