Roast Vegetables

Ingredients:

• 1 Beetroot, peeled and chopped into 1.5 centimeter pieces
• 1 cup of pumpkin, peeled and chopped into 2 centimeter pieces
• 1 cup of sweet potato, peeled and chopped into 2 centimeter pieces
• 2 tablespoons oil
• Fresh rosemary or thyme or sage


Method:

1. Mix all ingredients in baking dish and cook for 45 minutes at 180 degrees.
